Midweek Meal: Winter Salads

Salads are perfect for summer, but when done right they’re also wonderful in the winter, especially when they incorporate seasonal vegetables. Here’s a short list of a few of our current favorites.
Apple- Fennel Salad with Pomegranates and Pecans from Simple Bites. This simple salad takes a tiny bit of work, but with only four simple ingredients it’s so doable.
French Lentil Salad with Goat Cheese from Once Upon a Chef. Hearty and light at the same time, this salad will give you energy and is perfect for lunch or dinner. You can find french lentils at Whole Foods and Fresh Market.
Green Salad with Pears, Prosciutto, and Avocado from Finedining.com. The combination of pears and avocado is pure perfection.
Warm Winter Salad with Chicken from Yumsugar. There’s something about this salad that’s both airy and cozy and the walnuts give it that winter feel.
