Midweek Meal: Winter Salads

After spending last week gorging on turkey, potatoes, and pies of all varieties you’re probably ready for something on the lighter side. How about one of these winter salads?

Salads are perfect for summer, but when done right they’re also wonderful in the winter, especially when they incorporate seasonal vegetables. Here’s a short list of a few of our current favorites.

Apple- Fennel Salad with Pomegranates and Pecans from Simple BitesThis simple salad takes a tiny bit of work, but with only four simple ingredients it’s so doable.
